Penfolds Bin 95 Grange Shiraz 2002, SA Regional
2002, LIVE WINE AUCTIONSPeter Gago - Penfolds Chief Winemaker - "At once Grange...oh, and the aromatics just happen to be compatible with that of Shiraz. As is its want, the aromas transform and complex across many planes, with air and over time in the glass. At first, a rich mix of dark chocolate infused with coffee bean and black liquorice, then scents of tar, aniseed, raw (pure) soy and black olive. Is it oak, or a hybrid, 'barrel ferment' character that can be captured as it oscillates in and out of this beguiling aromatic offering. PALATE The palate is expansive, and yet finessed, balanced, highly defined, sleek. A continuum, an amalgam of dark berried flavours and textural sensations - deceptively accessible, yet a hidden largesse, untapped flavour and structural precursors threaten to ingress. 100% new oak is completely absorbed, meshed with ripe tannins, completing a palate of impressive length and youthfulness." Penfolds Reserve Bin 04A Chardonnay 2004, Adelaide Hills
2004, LIVE WINE AUCTIONSPenfolds Reserve Bin A Chardonnay has evolved into a wine that is now a distinctive, single region style in its own right, with a contemporary and distinctive Adelaide Hills Chardonnay persona. All fruit is hand-picked into small bins and then whole bunch pressed. The juice is incrementally filled to barrique directly from the press, and allowed to undergo a natural fermentation, sans inoculation. Every barrique is its own unique 225 litre ferment. Enhanced mouth feel and complexities are achieved by fermenting on solids, using a selective mix of new and aged French oak. The wine undergoes 100% malolactic fermentation (all natural).
